Roasted Vegetable Tacos

In our household, Friday nights frequently are ‘Taco Night’. We have tried several different combinations, such as ground beef, steak, and chicken. However, a few weeks ago for the first time we decided to give roasted vegetable tacos, with homemade salsa, a try. I must admit, it was a hit. Of course I totally expected one of my daughters to say: “It’s not my favorite”. Thankfully that didn’t happen. So now it’s a keeper and added to our menu. Here’s our recipe:

Taco Recipe

Preheat oven 400℉ Roughly chop the following:

  • 1 onion 
  • 2 bell peppers ( I used 1 yellow and 1 red)
  • 2 zucchinis 
  • 1 cup cherry tomatos
  • 1 cup mushrooms

You can use any combination of vegetable you would like. Place your vegetables on a baking tray lined with parchment paper. Sprinkle the vegetables with olive oil, salt, pepper, and chili powder.

Roast your vegetables for 20 minutes.

While the vegetables are roasting sauté the mushrooms on medium heat with butter. Once browned add:

  • 1 can of sweet corn (or 2 ears of roasted corn cut from the cob)
  • 1 cup of cooked red kidney beans
  • Season with salt and pepper to taste

Once heated through place in a serving bowl.

When the vegetables have finished roasting, pull them out of the oven and place them into a serving bowl.Then toss them with the following:

  • 2-3 drops Cumin Essential Oil
  • 2 drops Cilantro Essential Oil

Serve these two dishes with warm homemade flour tortillas, sharp cheddar cheese, and homemade salsa (click the link for my salsa recipe). You could also add other ingredients such as avocados and sour cream.

I will be posting our recipe for flour tortillas in the ‘Cooking with Micheal’ section on our website. They are so simple to make. One day soon I hope my girls will takeover. They have almost mastered making flour tortillas already. I just have to teach them to clean up after the fun part is over.

I found it fascinating to watch my children’s’ tastes change as they grow. They no longer want everything separated on the plate, which we battled for years. For the first time, with this recipe, they ate a true soft taco. This is one reason why ‘Taco Night’ is a family favorite in our household.
